Fuji X Series

I shoot JPEG and RAW, fine setting. I've got grain set to 0. (Why would anyone want grain anyway?? lol)
I use an old version of LR to edit, version 6.14. I use this version because it's standalone. I can't stand the subscription model. Obviously being an older version I may have to accept compromise. I use the new Abobe DNG converter with the original images. All seems to work well. I may have to change my editing software, but I'm used to LR and have had it for years. I would be reluctant to change (I'm also over 50, and that makes change hard man...)

I have to be careful sharing some of the images I take due to data protection. I'll see what I can do, even if it's part of the image.

When I need to use raw files from the X-T5 I convert them to dng in DxO or Irident then process them further in lightroom for the same reasons you do. The side by side comparison between adobe and non-adobe converted raws is stark, particularly on the X Trans 5 files. It wasn’t so bad on the 4 or earlier.

The problem with this is though that they're no longer truly "RAW" which results in significantly less latitude for highlight/shadow recovery as well as colour and white balance adjustments. You also cannot change the film simulation if that's important to you (it is to me).
Ideally I'd prefer a one stop shop of either Capture One or Lightroom however my version of C1 now pre-dates my only remaining Fuji camera (X-E5) so I now use the free Capture One Fuji Raw Converter to demosaic and apply basic settings such as film sim, exposure and colour details then export to either my full version of Capture One Pro or Luminar Neo.

Can’t say I really push my raw edits to the absolute limits, but I’ve always had ample editing latitude with dng, with no noticeable difference. They’re 300mb files so there’s plenty of data in there. When I use film sims I typically commit to jpeg, 90% of my digital photography, with the other 10% being film scanning.
I tried Capture one and wanted to use it, but for some reason I can’t move away from Lightroom. Old habits die hard.

Yeah that’s fair. I normally struggle to settle on a film sim out in the field. I could bracket but that would just be a PITA if I had lots of images so I like the flexibility afterwards.
Again, there are other solutions I do appreciate, such as X Raw Studio but that’s adds yet another step to the workflow.

I just accept the limitations and use MacOS Lightroom / Lightroom Classic with my X-E5.

Why can't Adobe just make their software more compatible? It's not like Fujifilm is some tiny niche brand not worth bothering with. Then again we're taking about the company that can't even develop an iPad app that works properly.

I find Lightroom excellent for my Fuji files - in particular the 40mp images. It’s only bested by Capture One IMO which I find has the best control over colours and fine details.
If money was no object I’d just upgrade my version of C1 however I’m reluctant to (certainly at this stage anyway) because I fully expect to purchase the X-T6 and dropping £300 on C1 now would be madness as it will be obsolete for any subsequent camera body.
As it is, I’m still plugging along with Adobe mostly out of convenience and it’s stacked until June, after that I’m done with them.

Based on the rumours I'm not that excited about it - certainly not as an upgrade from the X-T5. I'm more interested in the possibility of the X-Pro 4 as an additional body.

Camera prices are insane.

I got an email from MF the other day saying they now have used X-E5s for sale. It's pretty much exactly the same I paid for mine brand new 6 months ago.

I'm thinking of maybe getting an X-T6 or X-T5 to go with it. I've kept mine immaculate as a kind of street photography/city break camera (and somehow dragged it through the Sinai desert for a week without getting a scratch on it) but I'd like something that can get roughed up for hiking/skiing/get chucked in a rucksack etc.
