Having a bit of trouble enabling SLI though. On Device Manager it's showing both graphics cards, but I don't have the option to enable on NVIDIA Control.
 
Nope, the switching of the PCI lanes is automatic.

You do have the cards in the 1st+2nd long slot?
 
The first two slots are what you should be using.

Not the 3rd as that runs at 4X which SLI doesn't support.

Can you just look (the case has a window) and see what two slots the cards are in.
 
1) With the machine off and the power cable unplugged from the PSU, Install the new card without the SLI bridge
2) Re-attach power cable and Power on/Start up
- This will let the OS and Nvidia drivers recognize the second card.
3) Shutdown
4) Install the SLI bridge
5) Power on/Startup
6) Go into Nvidia Control Panel under '3D Settings'-'Set SLI and PhysX configuration' and the 'SLI Configuration' section choose 'Maximize 3D Performance' then click the 'Apply' button

At that point, you'll be running in SLI mode.

Looks to have worked!!

In my GE Experience they're listed as;

GEForce GTX 970
GEForce GTX 970

That's under my current recognised graphics card, it was previously showing 1.
So I guess that's worked.
