Gaming CPU?

Looking to move to AMD platform decided on Crosshair Viii Dark Hero, EK quantum block, have 32GB G. Skill B-Die 3600 RAM (8 x 4) and inno3d RTX3090 Frostbite alphacool wb fitted.

What cpu would you recommend?

For gaming the 5800X or 5900X but if your expecting an improvement in gaming from the 9900K then I think you will be disappointed as you will only gain a handful of fps at 1080p and probably nothing if you game at any higher resolution.

If you're after productivity then either the 5900X or 5950X if it's just for gaming then wait till AM5/DDR5 which is about 6 months away.

I would go for a 5900X given it's being paired with a 3090.
The additional cores are somewhat overkill but with your spec's I would go for the best, which in my opinion is the 5900x.

5950x is largely only around for over-spenders or some oddly specific workloads.
There isn't much point in that many cores without more PCIE lanes, and the gaming performance is equal to the 5900x in almost all cases (it's worse as often as it's better).

5800x for pure gaming is better.

If you do any productivity that utilises the cores then fine, 5900x, but gaming will not use them.

5800x is a bit cheaper.

5800x generally overclock better than 5900x and tend to have a better set of more stable cores, therefore if you factor in overclocking will run your games marginally faster for cheaper.

The 5800x runs hot so get the best cooling you can get. ;)

Thats the best for your setup unless you video editing and rendering.

Tbh choice of CPU was the most of the research and agonising I did for upcoming new build.

I mean, ok... the choice was Zen 3 or... Zen 3 (lol) Still, the 5800X does have a significant price hike over the 5600X (if you compare to 5800X upwards) but for me the extra cores for overhead and longevity stole it. What with pairing with a 6800XT (an easier choice for me vs any Nvidia this gen tbh) I'm hoping to keep up at 1440 ultrawide for a few years/two GPU gens with only minor tweaking. This'll be by some margin the highest tier and cost I've ever gone in a PC build (previous glory was a 6700K/1070/1080 ultrawide combo)

I know the 5800X has a propensity to running hotter, maybe the most out of this run of Ryzens. What you guys reckon on cooling it, will a H100i Capellix do it ok?

Hmm well considering we are half way through the year already I guess it could be 6 months away. But I am not expecting AM5 untill 2022.

I have a 5600x paired with a 6900xt both undervolted and only use about 200w total playing BFV.

That's... significantly lower than I planned for (5800X and 6800XT) or read up on. Any reason why it might be that low, even with the undervolting considered? (I mean, even my old 6700K/1070 drew more under load)

Fwiw I went for a Corsair RMX 1000W PSU (over the recommended 850W) just to be absolutely safe and confident, for the above and any upgrades in future given things like PSU or storage should last more than one upgrade of CPU/GPU etc.
