Gammon joint / apple sauce

Right chaps, am cooking up a massive gammon joint for dinner today. Going to roast up some spuds, carrots and onions together and also a side dish of steamed beans, picked fresh out of the garden.

My plan is to roast the gammon normally, though I will give it a bit of a salt and pepper rub before it goes in. Am mulling basting it in honey as well but undecided as of yet. This will be for sandwiches all week as well.

I have two apple trees. One with eating apples and one with cooking applies but for some unknown reason , I have never made apple sauce.

Can I go wrong with just putting a load of apples in a pan with some butter and sugar and letting it cook down? Am thinking maybe lemon zest might be a nice addition. Would you mix the apples up or just use cooking apples? So many options.
 
Just slice up the apples (surface area is your friend!), throw them in with some lemon zest and a few table spoons of water (you don't need much). Then cover and pop the heat on. Once they've 'melted' down, spoon in the sugar and butter and swirl with a spoon (I've forgotten the very simple word...) until it looks (and tastes) delicious.
Some people add a touch of vanilla as well, though I don't like that.

Cheers, that is what I was hoping. Gammon joint still has an hour and a half till it comes out the oven and then I am going to rest it for 20 minutes so got plenty of time. Will let you how how it comes out.
 
I've got a nice bit of pork roasting in my oven atm. I totally forgot to cover it in mustard (and no, I'm not just rehasing an OcUK meme). Bit gutted, but sure it'll be great anyway. Often go to the girlfriends for a Sunday roast, and her mother is a terrible cook so it'll be nice for my girlfriend to have a decent roast for once! I won't be serving what is effectively mashed broccoli and cardboard...
