Getting a good chefs knife reshaped

I have recently inherited a good Wusthof Chefs knife. But it has over the years been sharpened with a steel resulting in a concave cutting profile.

This means that if just wont cut by rocking it (think turning knife shape). Plus enough metal has been lost that the resulting edge is thick and really hard to sharpen. (see this image http://www.egullet.com/imgs/egci/sharpen/sharpen4.jpg)

Can I get the knife reground so that the whole blade is made about 1mm thinner and reshaped so that the correct curved cutting profile is restored ?

Can anybody recommend a company that can do this ?
 
Maybe not a company, but there is a British Blades forum with a lot of skilled people on there. They can hone the edge so you can shave with it.

Postage or walk in, I haven't used them, so no idea how good they are.

Sharpknives Ltd, they are only a few miles from me, they are just superb, I highly recommend them, they reground all my butcher knives a couple of years ago for me.
Also one of the few firms who can resharpen Ceramic Knives.

How much is the knife worth new?

You get everywhere ! If its not poncing on about your 5d3s and your 35mm L lenses it's in here :-)

To be honest it's not really about the worth. It's my mum's old knife and I remember sooo many lovely meals she cooked with it. She died a couple of years ago and I just don't use it for the reasons above.

I'll give sharpknives a call and see what they reckon they can do !

I've used sharpknives before, i live about a half hour drive away. He got my globals much sharper, but didn't get them back to the razor sharp edge that they had when new. Will probably go back this year however, as i'm not aware of anywhere better.
 
I use a lansky kit for all my blades perfect each time.
The kits let you reprofile the blade to the angle you want, so sharper for small blades and a more robust edge for things like cleavers.

Sometimes it doesn't pay to have the razor sharp edge,my 12" Butcher knife has a more robust sharper edge now, since being reground/ reprofile.
