Getting data off two drives in a new system

My computer died the other day so i'm going to be putting a new system together with a 500gb Sata drive.

In my old PC i had a wee 40gb IDE drive which had my OS installed on it. I also had a 200GB IDE drive with just data on it (music, video files etc).

With the 200gb HD will it be a simple case of plugging it in to my new system and all my data should still be there?

What about the 40gb driver with the OS installed? Obviously i dont want to boot from i just want to extract some of my files off it. Is that doable?

Yep as long as you put the new 500gb HD (with OS installed) as the bootable HD, which I think it should do anyway as it tries to boot from sata before IDE, or my computer does anyway, your 2 other HD's should just show up in My Computer and you can explore and copy files over etc.
