Gluten Free breakfast ideas

Hi all,

I suffer from Coeliac disease and as such can not eat anything containing gluten.

My current breakfast of choice is pancakes made with gluten free flour topped with bananas and honey.

I am a keen long distance runner and swimmer, I am going to start swimming in the mornings before work. This means I will only eat a snack before leaving the house, swimming for an hour and then eating breakfast on the way to work on the train or at my desk.

I could make a pancake and just wrap it in tin foil and eating it when I get to work (my pancakes are quite big and think so I only ever make one) but wanted to think of some alternative ideas. The breakfast will have to be fairly substantional to make up for calories burnt while swimming (I want to maintain my weight rather than lose/ gain) and it will be accompanied by a protein shake.

Does anyone one have any suggestions on alternatives that can get eaten on the go?
 
Not ideal on the go but here are some standard gluten free breakfast:

Fruit salad, grapefruit, banana milkshake, yogurt with fruit and nuts, cheese + cold meats, smoked kippers, kedgeree, fried/boiled/poached/scrambled eggs + bacon, fresh fruit


Ok the hot stuff wont be great but any fruit salad, yogurt type stuff is fine on the move.
 
Oats are gluten free aren't they? (I've found mixed information) If they are, then you can blitz them up into a rough flour and they make good pancakes.

Otherwise, you can make tasty porridge with rice or semolina. You do need your carbs for running and I normally make porridge and stick it in my small Thermos. I'll usually do it with oats, but use semolina every now and then for a change. I do it in the microwave, pour it in the flask and the heat finishes it off cooking while I cycle in the morning. Typically, oats are ready pretty much instantly, semolina is best if it sits for a few minutes and pudding rice is ready after about about 30 minutes. Smaller grain rice will be ready quicker :)

Had you thought about making muffins with semolina flour? They puff up pretty well and the texture is good :)
 
Try some of these snacks; freeze grapes, chickpeas, apricots, nuts (pistachios are awesome), hard boiled eggs, protein shake with a milk alternative (almond milk etc), popcorn (with no butter or salt it is a decent healthy snack) or if you really want to up your calorie intake try a gluten free beer!
 
Poach some smoked fish (haddock or kipper fillets), poached eggs, fried/grilled tomatoes.

(I would have some buttery toast with that but imagine it would be fine without, or the gluten free stuff mentioned above maybe!)

Thanks for the suggestions everyone but it looks like we got a little bit off topic. I originally asked for ideas of food I could eat on the train/ at my desk :). I got myself a waffle iron in the end so have been eating waffles.
