Usually whip up a mega chilli with plenty of kidney beans and even some sweet potato thrown in which lasts a good few days for tea.

Sometimes do the same of a curry. Got some nice slow cooker lamb curry for tea tonight actually left over from Sunday!

We usually bulk make a load of protein pancakes and freeze them to last through the week for breakfasts. Or if we aren't having pancakes i'll knock up a huge batch of sweet potato and butternut squash fritters which will last a good week or two for breakfast with a sausage, a piece of bacon some grilled tomatos, grilled mushrooms and poached egg!

Another staple quick and easy tea is sweet potato, chicken breast/steak and some broccoli.

Whenever we cook to be fair we always make way more than one meals worth of food so we can have it for dinners and teas through the week.

Mrs whips up quite a mean thai style salmon soup/broth with courjetti. Really good for you, very nourishing and warming. Very simple to make too.
 
Some really good suggestions here, I'm going to have to try some out.

Time is a limiting factor for me sadly so I normally cook a batch of something at the beginning of the week and have that for at least a couple of nights. Normally something like bolognese or lentil and bacon soup. Occasionally a jambalaya.

Now the cold weather's turned up I might have to stick some stews on.
 
Sweet potato with tuna, sweetcorn and mayo is hugely underrated too.

One of my go to meals when I cba cooking when the Mrs is out is a tuna melt. Absolutely devine on 2 pieces of seedy batch loaf, some nice chedder or similar on top, grilled to perfection.......*drools*
 
Nice and simple really...

Stir fry's beef/chicken/salmon always usually marinaded
Spaghetti's
Parmegiano
Chicken in various forms usually just oven cooked in some herbs in the oven
Fish cakes and veggies
Pesto type pasta either with vegetables or just things like green beans/tomatoes..

Nom nom nom...

If we can be bothered we'll normally also cooked some whole wheat noodles through the week to mix with salads from sundays onwards along again with some chicken/chickpea type mixture , maybe with canned salad vegetables or 3 bean type can mix, healthy and easy!

Also literally just discovered the fresh bags of salad, obs more expensive than a normal lettuce but much prefer the variation and easyness!
 
It's normally:-

Monday: Baked potatoes

Tuesday: Something in the slow cooked as I'm at uni all day - Beef stew, sausage casserole or chicken chasseur are the usual suspects.

Wednesday: Pizza as we only have a 1/2hr crossover between the wife getting in with the kids and me going out to uni or the Masons.

Thursday: Something from the freezer that's quick as the kids are out to beavers/cubs. Usually chicken steaks/chips or waffles/beans or carrots. I'll often have chicken fillets with brown rice and veg instead while they're at beavers/cubs - the only night where we sometimes don't all eat together.

Friday. Something fishy - either salmon fillets with smashed new potatoes, spring onions and carrots or smoked haddock, mashed potato and carrots or full on cod, chips and mushy peas.

Saturday: Something beefy - steak and chips with all the trimmings (mushrooms, onion rings etc) or hache steaks, new potatoes and carrots or beef curry or proper stacked burgers, chips and corn on the cob.

Sunday: Full roast at home or at in-laws.
 
Fish and veg
Chines 5 spice beef stir fry with ginger, spring onions, baby sweet corn and noodles.
Malaysian chicken stir fry
Chicken madras with rice
Sausage egg and chips (for a treat!)
Roasts of all descriptions
Lots of slow cooked meals in winter. Just generally google a recipe and cook it a few days later.
