Not I-Drive you can be sitting in that for atleast an hour and a half, but turkey lake and john young prkway are 5 lanes each way. you get on them and it is 15 - 20 mins.
 
Myself and the gf are going there in July (29th to be exact, for 2 weeks), and we've decided to splash out extra and stay in the park itself, in the Dolphin hotel. I've stayed in Disney before in the Swan (sister hotel to the Dolphin), and you do get bonuses by being there, like easy transportation to all Disney parks, plus you're likely to be within walking distance of at least one park (the Dolphin is walking distance from Epcot, as well as the Boardwalk, and Fantasia Gardens Miniature Golf Course).

As others have said, parks such as Universal, Universal Islands of Adventure and Seaworld are an absolute must. We'll be doing the Discovery Cove to swim with dolphins, and we'll likely be seeing the Cirque du Soleil at Downtown Disney.

Two weeks to see everything will be pushing it, but with good planning and a determination not to go back to the hotel when it gets too warm it should be easily possible. All Disney parks have water fountains all over the place so you'll always be able to get a cool drink of water when you get too hot.
 
Yeah, looks like we are going to have to plan it well.

OO one more thing, where is the best place to eat in Disney? Having to eat out every day is going to be expensive, so i need somewhere cheap but nice for most of the time and somewhere with some luxury for first/last nite of the holiday.

Any suggestions?
 
That bit I can't help you with, unless you actually go into the hotels to eat. The food is pretty cheap and there's plenty of it, so you're best having a nice big breakfast to keep you going to mid-afternoon, then you can have some food and get out of the sun when it gets really hot.

They can be long for certain things, but most rides have the Fast Pass system, when you go up to the machine and enter your park ticket, and it gives you a list of available times. You simply select the time you want to do the ride, come back at that particular time, and walk straight on. Certainly beats queuing :)

I can fully recommend the Sheraton Safari. It's litterally over the road from disney world and is a really nice hotel!!

Also Kennedy Space Center is an awesome experience!

I can't wait to take my missus and little boy to Florida in the coming years.
