I'm looking for the following setup:

1 x SSD for OS/software
1 x 2TB hard disk that I use for media & personal files
1 x 2TB that mirrors the first hard disk in everything, an exact copy that is updated in real time for backup reasons.

Can anyone explain what type of RAID that would be, so that the 2nd hdd can mirror exactly the first one, and what do I need to read (any links?) on how to install it?

Would that allow me to instantly swap the backup in the place of the 1st hdd, in case the latter fails without any loss of data whatsoever?

RAID1 will mirror the disks but its not a backup, its an availability solution to keep you working if a disk fails.

With RAID1 if you delete a file or something is corrupted then the other side of the mirror is affected too. A proper backup needs to be independent of the source disk.

You'd be better off having the second disk externally and periodically syncing with the first disk.
