Good couscous recipes for cold lunches?

Hi all

have recently been introduced to having couscous cold for lunches... it's delicious, cheap and simple to cook, but am looking for some variation in order to make it a little less samey...

What sort of combinations of veg, meat, spices etc work best?
 
For about 2-300g or so of cous cous (dried):

Big handful of chopped parsley, zest and juice of 1 lemon, handful of raisins, handful of toasted pine nuts roughly chopped, 3 finely chopped spring onions, salt pepper and a big glug of olive oil. Yum:) Perfect with BBQ's, summer salads and pittas.
