Got 2 smoked cod fillets, what do i do with em?

Hey peeps.

Got 2 smoked cod fillets from tesco the other day as it was reduced to just under £3. Whats a good easy way to cook em so the flakes are nice and soft just like from a chippy?

Also what should i do with em, some jersey potatoes and peas and carrots sound good enough?

Was thinking of pan frying with some walnut oil perhaps but i duno what times, and how much oil and do i flip and which side skin down or not etc so asking for ideas and advice on it as wana make it really nice and soft and not overcooked or anything.
 
Oven cook, lay them in milk with a grated cheese, garlic and some parsley. Cook for 45mins at 150c

Have courgettes, green beans and asparagus with them next to a selection of sweet potato wedges.

Slice sweet potato into wedge shape with skin, lightly coat in olive oil and butter melted together. (a little goes a long way)

Bake at 150c for 45minutes along with the fish.

Ta. Ill try that.

So ive done it in a glass cassarole dish with lid on about 3 small pieces or so skin side down and put some milk in that is about covering but not the tops. Dont have garlic but had garlic powder so sprinkled that over it. I have mild cheese slices so duno how that would work and no parsley.

Dont have the other stuff so just put in a pan carrots and jersey royals cut up in a pan and ill do that as it should be a plateful with the fish at the end.

So gasmark 2/3 in centre of oven for 45 mins yeah, k doing that now.
 
Smoked fish I don't like to mess with too much. Just steam it. Serve with new potatoes (boiled and covered in butter and parsley), asparagus and brocolli and a poached egg.
 
Poach cod in milk with a bayleaf and some peppercorns. Set aside the cod and use milk to make a risotto with finely chopped shallots, bacon lardons and peas. Top up with fish or vegetable stock if you need more liquid. Add cod back in at the end and serve with butter on top.

Heaven.
 
Grate carrot, celery, 150g mature cheddar, rind of a lemon, into a bowl. Chop red chilli, chuck it in. Coarsely chop flat leafed parsley and add. Mix it all up, throw fish in along with 100g creme fraiche and the juice of half a lemon. Season to taste.

Cover with mashed potato and bake at 200 for 35 mins. Nom, Fish pie.
 
45mins for cooking fish? It's already dead you know!

I'd have poached it in some milk with some bay, peppercorns and half an onion in there. Can turn the poaching liquid in to a white sauce after, too. Parsley or not.
