GPU for 2560X1600

Single 670 is fine at 1440p. Can still play ultra everything. 1600p is basically the same.

Waste of money going SLI/crossfire IMO.
 
But not at 60 FPS constant anything below 50 FPS I believe is unplayable for myself.

as of today right now, the best option for a 2 card setup for you would be 670 SLI

crossfire is flat out broken in every game I've seen tested when using a test method more reliable than FRAPS

in other 3-4 months time this might be different again and 7950 could be a better price / performance prospect, but as of today right now, all the tests indicate that crossfire is no better than a single card

the orange on this graph is 7950 crossfire, and lots of orange is a bad thing (it means stutter and inconsistency of FPS)
the blue line is 660ti SLI which as you can see is much more stable;

^ With current crossfire drivers ditching a 670 to go 7950 CF would be suicide.

I also dislike going below 50fps, however you will be at 60 fps 80% of the time, even on Ultra from my experience.
 
Can't say I notice stutter with my system in gaming (and I look for it) but then again I know what I'm doing.
