GPU for new build (not really for gaming)...

So .... if in a few years down the line I was to upgrade my 1080p monitors and/or got the time to play the odd game, would I be better off looking at a 2060 or something now instead of the 1660?

No, because in a few years you get more performance for your buck, I would wait until you want to game really but if you want to play game/s now get a gaming card to play the odd games.

you can play the odd game/s with 1660

If you want to play the odd game, the best advice is probably to wait a few weeks, as a new generation of nvidia cards is due to be announced pretty soon (under three weeks now?) which is likely to mean whatever you buy, you're going to get more for your money after that. IMHO, YMMV etc etc

This is exactly what I would go for. A RX 570.

Yup.

You can get them dirt cheap at the moment second hand, I'm willing to bet OCUK would do a better price on the b-grade I listed.

Plenty of connections for multiple monitors and still a decent 1080P card if you dabble in gaming.

I'm using it as an interim card whilst I wait for the RTX 3000 / Big Navi, and it seems to run every single game I throw at it. Couldn't be happier really.

Cracking cards for the price tbh, I'm on an RX580 right now and it surprises me how good it is for most games. Planning on doing the same as yourself and upgrading to something more modern this year, but I can honestly see the 570-580 still being decent for a year or two at last.
