So .... if in a few years down the line I was to upgrade my 1080p monitors and/or got the time to play the odd game, would I be better off looking at a 2060 or something now instead of the 1660?

You can get them dirt cheap at the moment second hand, I'm willing to bet OCUK would do a better price on the b-grade I listed.
Plenty of connections for multiple monitors and still a decent 1080P card if you dabble in gaming.
