Considering your resolution a 7950 wouldn't be too far off a 680, "maxing" both those games with a single card wont be possible though, not with that many pixels on the screen...35ish fps on BF3 and probably in the 20s with Crysis3 lol.
Turning down the AA should make them more than playable though, two 7950s will crunch through nearly all games with settings turned up to 11 (not all games, but most)

For price i would say 7950 crossfire is unbeatable
This. That should be able to allow you to play at max settings with your resolution, assuming the rest of your PC won't hold it back.

Overclocking them is very easy, dont worry about that part, i would just get 2 cards with good coolers on im sure the guys here can recommend a few.
Single card a 780 GTX will do the job but is expensive. 7950 offers much better value although the drivers can be a pain.
