I've been looking at the new Sapphire 280x toxic, only problem is that it requires 2x 8-pin connections powering it.

I have an OCZ StealthXstream 600w PSU, which only has a 6+2 pin and a 6-pin, but the product page lists the power as 250w TDP.

I wouldn't be inclined to overclock it on my PSU but would it be able to power it?

CPU is a 2500k @ 4.2, just in case you need to know.

The other thing is that if I had to drop down to the next model (the vapor-x) which is advertised as 8+6, actually has 2x 8-pin sockets, so would I need to buy an adapter or just plug the 6-pin in fine?

Would I be able to overclock it with this set up? Or would it potentially crash at high load even at stock?

I think you should get t working correctly at stock first and then look at overclocking after you have verified its stable.

600w should be enough for some clocking yes.
