My system is getting on now, I was thinking of a new grphics card,

Radeon RX 6800 XT. However I dont know if the rest of the system will throttle it.

Intell i7 6700k 4.9
Asus Maximus vii mb
16gb Corsa Vengeance DDR4 2400-c
Water cooled
MSI gtx 1080 8gb
The system is still running well it was bought from OC (8 pack dydtem

How about if I add another 16gb of ram ?

No difference, the bottleneck relates to the CPU, not the amount of RAM. Faster RAM (or overclocking it) would help when you're CPU-bottlenecked, since 2400 is pretty slow.

A near 5 Ghz 4 core/8 thread Skylake CPU is enough to push the bottleneck to the GPU in many games, especially older games and when played a higher resolution, but unfortunately not every game.

Would it stop me buying the 6800 XT? Nope.

I also have 6700K and 1080. The CPU is feeling slow now, it's definitely just as much in need of an upgrade as the GPU. I will be buying a whole new PC at some point.

Looked at some reviews all seem it looks better than 4080, but draws a bit more power. But really wanted to find out about the rest of my computor. Also it comes bundled with Darfield which makes the card a good price.

Is that a typo for 3080? The 6800 XT can't compete with a 4080.

Does well against a 4060 Ti and 3080.

It (6800 XT) also does well with weaker CPUs, so that's another advantage for you.

Though, in some circumstances, frame generation can help out weaker CPUs too (toward the end of the video):
