Halloumi has levels of maturity too, if you go for the old stuff then it's almost rock hard and has a really intense taste The rock hard stuff is PERFECT when grated and served with pasta
I love halloumi, but it's pretty rank when it begins to cool and go squeaky though. I keep mine on the edge of the BBQ to keep it soft and warm. Lovely stuff with onion chutney.
