Halloumi Cheese + watermelon = Win

Halloumi has levels of maturity too, if you go for the old stuff then it's almost rock hard and has a really intense taste :) The rock hard stuff is PERFECT when grated and served with pasta :)

Does it have animal fats made with it like parmesan?
 
Don't think so, didn't realise that parmesan contains animal fats. I believe it only contains fats from the milk.

Apparently I've been mislead for years!

No it doesn't, just uses raw milk and rennet.

I think I've mistaken rennet for fats way back when. Never mind me. :(
 
I love halloumi, but it's pretty rank when it begins to cool and go squeaky though. I keep mine on the edge of the BBQ to keep it soft and warm. Lovely stuff with onion chutney.
