Hard Drive Setup

How do you guys setup your hard drives to maximise performance? Do you have all your data stored on a fast drive while the OS is on a slower drive or vice versa? Do you store all your data on one drive and have a second as backup? I have only ever had one hard drive installed at a time and want to have two but unsure how i should set them up and what hard drive i should buy as a second drive. I currently have a maxtor diamond max 10 200gb sata. I use my pc for playing games, surfing the web and encoding media. Any help and advice would be appreciated.
 
I have my OS +Pagefile on a single partition of 5Gb on either a Raptor (This rig) or a 15k U320 Atlas II SCSI (Server/downloader). Then I have another small partition for my programs ONLY and the rest of the Hd and other HD's are simply used for storage. That way the important files fragment far less and the system runs much more efficiently.
 
I would suggest:
OS on drive 1, own partition
personal data (letters, spreadsheets etc) on drive 1, own partition (easier to find for backup purposes)
game installs on drive 2, own partition
page file on drive 2, fixed size in it's own partition
temp internet files in the same partition as the page file

For encoding media, read from one drive and write to the other.

If possible put the drives on their own cables, but one will have to share with your CD/DVD - it doesn't really matter which.
