My hard drive is showing several signs of imminent death. For example. opening a folder takes 10 seconds, and opening a video takes so long that I click the 'X'

I have all the data backed up, so it's not an issue in that sense

However, crystaldiskinfo and hard drive sentinel both claim the drive is in good health  - shouldn't they be reporting errors?

Could be the drive failing - but if you are on Windows 10 it isn't completely unknown for explorer to have issues like that in 10.

Wife had same issue with Windows 10, when she tried to create a folder in Documents the machine would just lock up, applied the known registry fix thats advised and it resolved the issue for a couple of weeks but then it came back.

I ended up putting her a SSD in and complete Windows re-install and touch wood it's been fine for 2 weeks.

edit: Forgot to say this was a 3 month old laptop and the Hdd reported no errors, it has since been put in a caddy and has been performing flawlessly since so assume it's Windows 10 that has the issue.
