How about cherry sauce? Confit it with cherry sauce. If anyone has a recipe for that ultra sweet boozy sauce then post it up, it's something I've had several times out and about but never cooked. Omg is it tasty.

Just google 'morello cherry sauce' - that's what it is, a few different recipes though, both sweet and sour.

Roast duck with cherry sauce was a waitrose meal deal a while ago, sauce is good if you're feeling lazy:)

did roast Duck with marello cherrie sauce (cherries, red wine vinegar, port, butter, and arrow root to thicken), roasted charlotte potatoes, tender baby asparagus and pak choi.

Was delicious.

made a pear tarte tatin for pudding which was lush.

rG-tom from another thread said:
get a sauce pan and add a quarter of a glass of red wine, 1 tbsp brown sugar, some salt and black pepper, 1tbsp red wine vinegar and ~100-125g of fresh blueberries...simmer this for about 6-7 minutes stirring regularily to release the flavour of the blueberries and this will thicken up.
