Help Me Choose a new Chefs Knife from these choices

Option 1) Henckels 4 Star set of 3 http://www.pots-and-pans.co.uk/henckels-four-star-special-3-piece-knife-set I only really need the chefs knife but the other 2 would be useful additons to my collection

Option 5) I.O. Shen Mastergrade http://www.pots-and-pans.co.uk/i-o-shen-mastergrade-210mm-chefs-knife

I will be happy with any of them but just can't make up my mind so need some help with the decision. TH Global set with the sharpener if I went for Global would be useful as I have problems with my hand that make holding a steel properly extremely hard and the same for using whetstones.

Is there any shop you could go to locally so you can get a feel for them? They are all good knives what it really comes down to is what feels comfortable in your hand. What one person loves others might not like.
 
Out of those I'd prefer the Shen, my own preference for top end knives are Kasumi though.
 
I have tried them all in my hand but not at the same time as some have been friends and others just in the shop. Im just looking for some input on longevity and pros and cons of them all.
 
if you like the handles go with Global, if not i would take the Shen, the blade angle is different on japaense blades that i think feels better when in use.

also with the global that sharpener is an excellent addition, not quite as a good sharpening with a fine stone but far less likely to damage the blade then you would with a steel if you havent been shown how to use one properly
 
You need to try them, I thought I would love the Global but my sister got a set and I have used them a few times but I could not get the knife to be a part of me. It doesn't feel natural in my hand. I found the grip too loose, the balance unnatural.

I have a Japanese knife like the Shen and if I were to buy without trying, that is where my money would go.
 
I'm not a fan of Globals as a the handle makes my hand cramp up way too much, not a nice hold. As for the other 3 it depends how you cut, if you like to roll your then the Wusthof is great and has a nice rock to it, and out of the Henckels or the Shen, I'd go Henckels but the wider grip on the Shen could be nice, both great quality though.

100% correct, looked at some new knives a few months ago,being left handed I just couldn't get on with the Global, it's handle was all wrong for me, but Shen was almost perfect, maybe that's down to the blade & it's angle.

I'd go with the Shen out of those, as it's my type of shape. I use Kin's though, which can be similar looking. Lovely knives. I might get a new one next month. Everyone needs a treat.
 
I use globals, personally I like the handle not everybody does though. Like said above, try them all out different knives suit different people and their chopping styles.
