I would possibly add considering looking at Oracle VM in addition to KVM. Due to the way Oracle are getting with support and licensing of their products on virtual Linux systems we are seeing people wanting to use this more and more in order to try and save money and maintain support ... (I wouldn't say that I've personally found the product to be very good though). You can sign up for a login and download the software you need for it from Oracle (Oracle VM Server, OEL, Oracle VM Manager).
Given the starting point it's probably worth looking at Red Hat's page on what subjects are covered for their RHCSA exam (their basic qualification) and use that as a list of subjects to look at using CentOS.
