Help me spec a server!

Most likely more reliable than Windows. As for east of setting up I have never had a problem setting up a Samba and Mail server

That's the problem, I DO have problems with Samba. All the bloody time! :p

If you know of any good tutorials/resources that don't require me spending 14 hours of my life looking at the man pages that would be great! I'd want to be able to understand how to make Samba as secure as SBS. I'd look myself but I am far too knackered to be bothered right now! :D

I am comfortable with Debian. Recommend any specific distro? [and any guides? :p]
 
Distro? My favorite Debian distro is Debian. :p
I recommend Ubuntu to desktop users but Debian stable is a better choice for a set-it-and-forget-it server. Ubuntu Server might have better bleeding-edge hardware support though so I'd try the parent distro first. There're guides all over the place.
