It shouldn't be the delay between the shutter press and the shot, you sure you don't have a 2 second delay turned on?

Upload a photo to show us, then we can tell you exactly why instead of guessing.

There isn't a delay as per say, just the camera taking the shot (the shutter noise). All settings are as default

Well for example these two pictures, she was looking at me smiling, I press the button, the camera makes the shutter sound and the picture then comes out like below:

This is a good one working but very rare!

That looks like you missed the shot yourself, you need to be faster with the trigger.

Pre-select focus point and pre-focus will help too.

Does the D3100 have something similar to AI servo? This may help the case here. There's no issue with taking the shot, and she's not going to stop smiling in less than 1/200th of a second.

Still no EXIF in that shot Andy, I presume whatever photo editing software you are using is stripping it.
