Help with Netgear Nighthawk R8000 and tri-band?

Okay, so this router seems to support tri-band (1 for 2.4Ghz and 2 for 5Ghz). My question is, how should I be using this?

I have many WiFi connected devices, the usual mobile phone, tablet, laptop but I also have a Nest thermostat and a couple of Google Home devices too.

All these devices can be connected to 5GHz but should they be? I don't think the Nest or Google Home devices need the increased 5GHz bandwidth so if I throw it on it anyway, won't that impact my performance of the phone, laptop and tablet which would be on the 5GHz? Should I just be putting on the devices I want maximum performance on 5GHz while the rest on the 2.4GHz?

Also, the Nighthawk broadcasts 2 different 5GHz networks. I believe the thinking is that you can then split devices to use both networks so it's less congested. However, there is an option for the Nighthawk to merge both 5GHz into one network which then allows devices to automatically pick the one that's the strongest. Is this worth doing or is it better to have them as separate devices and connect my devices to both networks and let the devices pick the network that's the strongest?

I don't think Netgear have done a good job explaining how these things should be used in practice along with the downsides too.
