Hollandaise Sauce

Anyone got any tips on making this?

All the supermarkets near me seem to have stopped selling it. Whenever I try to make it, the end result just tastes like lemony eggs. Sometimes it doesn't thicken up either.

I've tried a bunch of different recipes online but the results haven't been great.

I usually stick a couple of egg yolks and half a lemons juice in a bowl, suspend it over boiling water and whisk.

As it just starts to change colour I start adding chopped up butter, around 125g of it. Keep whisking as you go.

It should start to thicken fairly quickly. Stir in a pinch of salt and you're done.
