home cinema setup at 4k for gaming

Is it possible to get 60hzs on a 4k amp with hdmi 2.0. Rather than using a displayport 1.4 that my amp does not support.

I do just this and I also have a Denon AVR-X2300W, so you'll be fine. Your amp does actually support HDMI 1.4 though as HDMI is backwards compatible.

But yeah, that amp is fine for UHD gaming at 60hz. The GPU though isn't really unless it's older or less graphically intensive games.

i was thinking i would need to use a DisplayPort 1.2 with a hdmi connection on the end to get 60hzs or would it defult to 30hzs if i used a dp to hdmi cable. sorry if that sounds wrong but im not really that technical.

No, you can just use HDMI 2.0. 580s have HDMI 2.0.
