Homemade Protein Bars

Im considering having a go at making some bars for preworkout. Its more convenient to consume a bar at work before I hit the gym than it is a shake or a meal. Theres a ton of various recipes but most dont tick the boxes for me such as:
  • Low sugar
  • Last a week or so
  • Dont call for Uncorn tears (i.e. uses widely available ingredients)
I'm thinking maybe ingredients such as:
  • Whey protein isolate
  • Oats
  • Peanut butter
  • Other garnish such as seeds or coconut, maybe some dried fruit
I need a binding agent maybe though? Many use milk, which would shorten shelf life. Some use honey, but Im concerned about sugar content.

Any suggestions chaps?
 
I used to make my own using:

Coconut flour - expensive but adds loads of fibre and has a refreshing texture/flavour to it.
Whey - flavour of your choosing
Almond milk - to bind
Dark chocolate - to cover the top

I'd wrap each bar in cling film and freeze them once the chocolate had cooled. They last for months in the freezer, just take one out in the morning before you go to the gym.

Macros/Micros were:

Carbs 12g
Protein 10g
Fat 6g
Fibre 9g
Sugar 1g

You can adjust the ingredients to match the macros you are looking for. I wanted some high fibre, healthy fat and low sugar protein bars so they worked nicely.
 
Thanks pal, they sound awesome. It never even occurred to me to freeze them! Presumably they taste OK once defrosted?
 
I used to make truffles with pretty much the same ingredients as Kris except I also added peanut butter and used coconut milk instead of almond.
