How Do You Know Trim is Working

There isn't any, it's transparent to the user.

The Intel Toolbox when it's re-released should tell you from the drive perspective, in the meantime grabbing a tool to read the SMART info on the drive may tell you.

From an OS perspective open a command prompt as administrator and type "fsutil behavior query disabledeletenotify" if this returns a 0 then TRIM is on within Windows, meaning it is sending commands to your drive providing you're using drivers that support passing the TRIM command so ensure you're using the MS drivers for your IDE or AHCI controller.
