How do you like your steak?

Medium rare/rare - so that's bloody, pink but not raw.

Being married to a french lass.. if you say rare.. it might still be alive..
 
Most steaks I will have rare to blue. Sometimes sliced thinly and eaten raw. The time I have medium/rare is when I want the steak warm through.

A good value under rated cut is the flat iron. I also enjoy ribeye.

Oh..yeah..I'm completely familiar with that :/ Most places don't seem to be able to get anywhere near what they claim they're cooking it to.

Yeah, that's why I stick to Viva Brazil. I've found that they're more than happy to bring a steak over to the doneness I like, that and the unlimited part.
 
Bloody as hell.

I'm shocked that people ruin steak by ordering well/well done. The same people who order as such will complain it's dry/overcooked.

Forums are funny places. The last pace we were chatting was the thread about Three, couldn't have disagreed with you more in that one. You're spot on here.

The 'blood' is actually water and some myoglobin (yes I did Google the spelling).
 
I normally cook mine rare. I've found if you salt them overnight the night before it doesn't leak blood everywhere and stays juicy.

I like mine rare or medium rare. I will eat steak medium too but if it goes over that its just not good. I find it weird that a lot of restaurants here cant get it right. So I always order rare and most times sent it back when I have gotten well done or medium well.
And then the waiter usually says something like "are you sure its not right?" Like I wouldnt know the difference.

But at home it usually ends up pretty much perfect to my taste. So that is always the safest way of getting it right.
