How many CPU power cables do i have to use?

Does the MSI X570 Tomahawk need both 8 pin and 4 pin CPU 12v cables attached?

My EVGA PSU only comes with a single 8 pin, but it does include a splitter cable.

Never used one of these splitter cables before and would prefer not to.

Will be installing a 5800X if that makes a difference.

One 8 pin power supply cable EPS ATX12V (4+4Pin) is fine.

Unless you're using some more exotic cooling anything more than one is overkill.
8 pin EPS12V connector is specced for ~380W.

Suppose if i had to use the splitter it should be ok or EVGA would not supply it.
