I think it's the physical stickiness to your teeth, like when you have to pick it out. If that's the case then from my own tooth picking experience I'd say crisps were the worst, then chips of descending crispiness and then any fresher potato variants.That's interesting and something I didn't know... Does this goes for all potato foods? I take it that starch breaks down much slower resulting in sugars being released more slowly.
