How on earth was I having this conversation with no service?

I wouldn't go by what your iPhone is saying sometimes. For instance, I've been in a "No Service" situation loads of times, yet texts still go through or I'm browsing the web.

The iPhone seems horribly slow at refreshing the signal indicator since iOS5. It's especially bad when switching from a 3G to a non 3G connection

Is anyone else getting the problem where the call connects but there's just silence?

I've had this a few times and whenever I've cancelled the call and tried again it's connected.
