How to host a total sausage party (homemade merguez and sweet chilli sausages)

Do you have to buy intestines from the butcher or do you use a substitute?

I just ordered synthetic casings from ebay/amazon. There are quite a few that turn up with a quick google for "synthetic casing" or "collagen casing" :) I find the idea of handling intestines a bit bleh so the synthetic thing is a bit easier.

Thanks, this is my problem as well, run out of space in the kitchen ages ago. So need my own house.

Hah just had a quick read up on the cases, funnily enough the collagen comes from the middle layer of cows hid.
 
Looks like a job well done, I've been wanting to make my own sausages for a while now. Seems relatively easy to follow, might have to go for it on the weekend.

Be sure to let us know if you do :) The hardest part is obviously the actual stuffing of the sausages. That said, it doesn't really matter if you mess up as you can stick stuff back in the grinder or even just dump it in the worst case. Not a huge deal :)
 
They are some nice looking sausages :). I own my own home and I still don't have room for a sausage machine. Guess I need (a lottery win and) a bigger house!
