How to make the perfect burger?

thats pretty much how i did it....

i went for the onion variety and cooked on the onions when the burger was flipped added cheese and steamed the bun on top whilst cooking.

Lovely soo im told as everone finished them all before i finished cooking and cleaning:o

Ah my mistake, I thought you were putting raw onion in the mince before smashing. Glad that they went down well, usually a good indicator something was tasty when they get munched before you can blink.
 
Curious about this smash method and fancy giving it a whirl. I've just recently bought a cast iron griddle plate which has a flat side and a ridged side. Would the flat side be a good shout for getting my smash on?
 
Frenchtart - you're quite the fountain of knowledge when it comes to BBQ related stuff!!!!

Think I need to get a better scraper though, have only got a naff plastic one. I'm guessing a metal scraper of sorts won't bodge up the cast iron?
 
I've found silicon coated stuff doesn't work that well with smoking hot! :(

I'd stick to a metal spatula for cast iron, it's not like it's going to damage the surface.
 
Tbh I sometimes use an old plastic heat-proof spatula that's pretty firm but I have to be very careful with it. If I leave it in the pan it will melt :eek:
 
So...in your opinion what would be the best meat from a vegetarian's point of view? ;)
Probably the best veggie (see what I did there :p) burger I've had (good enough to rival most meat burgers) is the veggie nut cheeseburger from Govinda's in Swansea.

For me tonight it's turmeric turkey burgers. Need to decide what I've having with them though.

Turmeric turkey burgers sound like you wouldn't need that much with them... some jalapeños and either a salsa or sour cream (or both). Actually...I think I'm essentially starting to imagine carne asada, which I planned to make tonight until I realised I didn't have enough time to cook :/
 
In a change, got some veal minced and will make some normal burgers, along with brioche burger buns, good quality smoked streaky bacon and cheddar cheese.
Might go for that crispy skirt cheese burger thing.
Meat is currently seasoning with spg, which should bind it together and give a different texture.
 
No piccys and had a catalogue of errors when making my first ever smash burgers haha.

1) Forgot to salt and pepper up the mince completely - doh!
2) Bent my metal spatula trying to "smash" the burgers meaning I had to frantically grab some plates and use them to smash them down
3) Some bits got stuck to my cast iron plate when trying to flip
4) Realised after making them that i'd used the lean mince we had in the freezer (~5% fat)

Not a great introduction to the world of smash burgers. Think i'm going to invest in a plastering trowel for future attempts. Still tasted OK but will be doing them properly next time making sure I properly season them and getting some 20% fat mince for sure!
