How to setup headphones for 7.1 properly?

I am getting a pair of HyperX Cloud II and was wondering that how to set it up for 7.1 surround sound properly.

Do I have to go to the Windows sound setting and select a 7.1 environment or this will be selected in the game menus where ever available?

I know that it has a button on the remote to enable 7.1 but how that works if the signal from the windows is stereo?

You literally plug them into the USB, plug the USB into your PC, set them as the default playback and recording devices and then press the middle button on the USB thing.

There is no option for 7.1 environment as I believe it sets this all up for you. If a game has the option for channels then set it for 7.1.

Personally I preferred them in stereo.
