Crab Cakes.
Ingredients:
Crab meat.
2 large White potatoes (Maris Piper, Kind Edward, etc).
1 Onion / 3 Spring Onions.
Handful of chives, finely chopped.
2 eggs, beaten.
Plain flour (for dusting).
100g Breadcrumbs.
50g Unsalted butter, cubed.
Tabasco sauce.
Olive oil.
2 Limes.
1. Bake two large potatoes in the oven (or if you're in a hurry peel, chop and boil) according to your usual timings.
2. Once the potatoes are cooked, set to one side and extract the crab meat from the shells.
3. Dice the onion (or thinly slice the spring onion) and soften gently in a pan with a little olive oil and some butter.
4. When the onion has softened, add the crab meat and heat through gently. Season to taste.
5. Meanwhile remove the baked potatoes from their skins (or from the water) and place in a bowl large enough to accommodate them. Crush the potatoes with a fork and stir through a few cubes of the butter. You want to retain as much texture in the potatoes as you can so be sure to crush and not mash.
6. Add the onion and warmed crab meat to the crushed potatoes. Now add the chopped chives, a few dashes of Tabasco sauce (to taste) and a large squeeze of lime. Fold the mixture together gently and leave to cool.
7. Lightly flour a shallow bowl or plate and season the flour. You'll also need a clean plate next to this one.
8. Using your hands, form the mixture into balls about 2 1/2" inches in diameter and place them onto the floured surface and flatten them out into thick, round patties. Dust all the surfaces with the seasoned flour and transfer to the clean plate.
9. Crack the eggs into a bowl and beat. Place the breadcrumbs into another bowl, close to your beaten eggs. Now dip each of the floured crab cakes into the egg and then into the breadcrumbs, making sure to cover them evenly, and finally onto the clean plate. You can make final adjustments to the shape of the cakes with a pallette knife and your hand.
10. You should now have your crab cakes ready to fry. Because all the ingredients are already cooked you just need to heat the cakes through and brown the outside. Serve with wedges of lime and a cold beer.
