I Need some new cooking knives

I'm sick of these shoddy ASDA cheapo things that require you to basically sit on it to cut through a block of swede!

I foolishly decided "i'll just look on the internet, it can't be that expensive for some decent knives" seems i was wrong but as i know we have many cooking types on here someone must be able to recommend me some decent knives without having to sell a kidney to buy them!

Can anyone help me with my chopping problem?
 
Global, Sabatier or Wusthof.

I swear by Globals but it depends how they feel to you, try some out in a shop if you can to see what is most comfortable.

It may seem like a high cost for a knife, but they will last you a life time providing you look after it properly whereas a cheaper knife wont last five minutes.
 
I didn't realise Sabatier do a reasonable range (itro £20 per knife). I bought one to try it and have been really happy with it. I'll pick more up as I go along.

Whether or not the experts here would consider it a good brand rather than an fashionable brand or not, I don't know!
 
First thing is what is your budget and do ou have a good steel. A good steel is just as impotent the knifes.

If you have a decent budget you will be amazed at just what difference a good knife makes. You just wouldn't think it would, but it does.
it's a style rather than make. It depends who it's by.

Sabatier isn't strictly a make - you see all sorts of knives stamped with Sabatier these days, lots are pretty crap compared to the decent ones.

While there are many knife manufacturers using Sabatier as their brand, some Sabatier manufacturers are considered authentic, and some are not. Generally speaking among connoisseurs of fine cutlery, only knives manufactured in Thiers, France from well established manufacturers from the 19th century are considered "genuine" Sabatier knives.

There are many manufacturers in the other countries that also use the Sabatier name on their products. However, these products are generally manufactured cheaply in mass production processes in China and other countries. These manufacturers generally use non-traditional and lower quality semi-forged and welded production techniques.

It's a decent knife to use, so I'm happy with it and plan to buy more. I suppose the real test will be how well they last...

Well if they are likely to last a very very long time like justin says then i see it as a worth while investment, so i don't mind if they are quite expensive, i'll consider anything suggested really - Ideally i would be after a set of knives than individual knives i think too

EDIT: just seen the price of those globals ones and my face went: :eek:

In that case I would recommend In my preference order. But really does depend on you hands and how you hold the knife

But when spending this money you need to go have a feel and if you can some how get sweaty hands like you do in a hot kitchen even better. You will also need to set aside about 30-40 for a decent steel and a wet stone.

Laos they might not be the cheapest prices, I just did a quick google.

Why a set? Just get a ~20cm gyuto and a smaller sized paring/utility knife, those are the two you'll be using 99% of the time.

there's a good cook shop on white ladies road in Bristol. They do globals and henckles but not sure about the others. Very awesome cook shop. They also do some very nice steels between 15-20. If you feel the steel you can feel how much bite it has. You'll need 1 steel for honing, little bite. You will then need a wet stone or steel with a lot of bite for a much more aggressive sharpening once in a while. I have two steels as it's just easier than a wet stone.
Other than that I'm not to sure. But dedicated non chain cookshops is your best bet.
