i5 3570k or i5 2500k?

Both as good as each other at stock. Slightly better performance for the IVY.

The 2500k overclocks higher and runs cooler, the IVY doesn't overclock as high as it runs allot hotter once you start overclocking. But the better IPC on the IVY balances this.

However you get access to all the latest tech with the IVY, such as PCI-Ex 3, better RAM overclocking etc...

I would just get a 3570k simply because its newer.
 
3570K and Z77 board, PCI ex 3.0 and better IMC. Also more stable with large amounts of RAM and clocks to similar levels when considering better IPC.
 
Sandy runs cooler, overclocks slightly higher and well for me I found the sandy to be £20 cheaper. Also don't get sucked in to the whole PCIE 3.0 if you look at benchmarks you can around 1 maybe 2FPS.

That said it all depends on how into overclocking you are and what sort of cooling you have.

At stock clocks the ivy should be cooler than the sandy shouldn't it? as it uses lower power and the IHS doesn't become an issue until its over-clocked, and due to its architecture advantage its performance is equal to the 2500K with a 2-300mhz OC.

If prices have dropped to the point where its little to no difference the 3570k is the better of the two, however if you generally have no interest in over-clocking and just want a chip for gaming then the Xeon E3-1230V2 is better than the 3570K as the extra 2MB cache and the Hyper-threading will outperform the i5's 100mhz advantage (that model Xeon has no GPU so cannot boost encoding speed with quicksync).
