The issue with 8GB now is that some games do use more than 8GB RAM and multi-tasking whilst gaming will struggle with 8GB. If you wanted to buy another set later there might be issues sourcing the exact RAM set and matching properly.
Also, the prices for 8GB sets aren't 1/2 the cost a 16GB set - they usually cost ~£20 above the 'real' half-way point.

As south has mentioned, games can even exceed 16GB, specially when it comes to games running mods or multiple mods like City Skylines, I was maxing 13GB with most mods I downloaded enabled , sure now I could push past 16GB easily so have 32GB
If you like Intel , 8400 is a cracking chip and Intel finally pulling out their finger . I7 8700 non K is outstanding , but even at £320 for OEM, still expensive and should be £300 for retail at max
