The 750W Corsair is perfect for that setup. Adding another 4870 won't stress the PSU.
I've got one of these running my 4870x2 and Q6600 (soon to be i7), and it'll happily run another 4870x2 on top if I decide to go that way in the future.
750 is plenty. If there's any chance of you upgrading the memory in future I'd strongly suggest an upgrade on the motherboard though. That one strikes me basically as a bodge job - they just took the basic layout of a LGA775 board and made it triple channel and LGA1366
Do you need an M-ATX case and motherboard or are you just getting one to match the motherboard. If I was you ,I would get a full sized Motherboard and case.

Nice setups. The m-ATX Asus Rampage II Gene may look small but in most tests it matches the ASUS P6T Deluxe - so a very good deal. In terms of cooling, you may wanna try the Thermalright Ultra Extreme 120 (now sold at overclockers) instead of the Noctua. That said - 2 Noctua P12 fans in push -pull cools any heatsink very effectively and quietly.
