IDE to SATA.

Atm i have two IDE HDDs. On my new pc i'll have to have SATA cus of having only one IDE channel on new Mobos. I was wondering, could i setup the new pc with optical drives on IDE and a SATA HDD, install windows etc, swap the IDE channel to my IDE HDDs, and transfer the data off them onto the SATA drive, and then change the IDE channel back to my optical drives? It is very important i keep all my data.
