Ideas for sweet potato

Due to minor issues with my skin at the mo I have been advised to replace potato with sweet potato as it's the number one food for vitamin A content....

Vitamin A is good for skin health....

Any good ideas with sweet potato?

Tonight was simple...I peeled and sliced them drizzled with a bit of olive oil and but them in a hot oven at 240c....they were delicious....

Not keen on them baked in their skins though...:)

Sorry. I try not to make unhelpful posts but I couldn't not express my disgust at these abominations ;)

I'll leave now and let non-haters give you some positive advice :o
 
The quickest way is to pierce one with a fork and put it in the micro. It cooks in its own skin after about 4 mins and you just peel it (after it cools down) and enjoy.
Basically treat them like you would a potato; loads of options but my favourite is sweet potato fries.
 
How can you not like sweet potato.

Pretty much same as normal potato.
Amazing as a topping to Shepard pie, or anything similar. Especially a spicy Moroccan style minced base toped with sweet potato mash,

Good idea...not had cottage pie for yonks...:)
 
I'll usually use sweet potato in a gratin which works well with parsnips and carrots. Also works well with beetroot if you pre cook the beets in the oven wrapped in foil.

You can also do them as you did above but drizzled with honey and a pinch of cinnamon.

Soup. They make a good soup with carrots and fresh corriander.
 
I feel like a broken record at the moment but the Serious Eats has a great sweet potato recipe - bit of extra faff but it makes them soooo good :p

I don't bother with the added syrup on top which I think is a bit OTT.

However just to mix it up, Ottolenghi's Sweet Potato Gratin is *&^%ing delicious and incredibly simple to make also.

Sweet potato mash: Bake them in the skins, then scoop out the flesh, press through a sieve and beat in some chive, lime juice, salt and butter.

A 1/2 cm dice is good in a fritatta.

Stan, you just impress me more and more with every post.

They are truly awful. Bring back the "humble" (DirtyJester, your forefathers are ashamed) spud and get rid of these ridiculous imposters.

I hate normal potato, normally we dont have it almost ever cos I dont like it at all but now I've started as its better for you than pasta etc. I do like chips but thats about it... But I love sweet potato! So mash it, roast it etc it will always be good :D
