I've got a 21.5" iMac and I'm looking to buy an SSD for it but I'm wondering if it matters which brand I get, do you have to get the same one Apple use in 27" iMac's?

Any brand should be fine. Crucial, OCZ and Intel are ones to look at. I believe the Apple SSDs are crap - at least the ones they fob you off with in the MBPs for ridiculous money are.

Anything with a sandforce controller, is the best (from my research).

Apple use Toshiba drives.

After having a look around I noticed OCZ do a 3.5" SSD as well, would this fit in the iMac, would I be right in thinking it's dimensions and ports are identical to a regular 3.5" drive.
