I loved the games of that style, zelda link to the past for the win!
Your right tho, games these days are all focusing on graphics
 
have to say farcry, the jungle environment is just too good. and if you can run it with hdr enabled then your just gonna flapp it bigtime.
 
Yea, I find Stalker very immersive. Sitting in a watchtower in a thunderstorm, looking over a decrepit military base, watching troops trudge through the rain whilst peering through your bino-cu-lars for rogue mutants and anomalies.......
 
EVE online is one of the most imersive games I have ever played. I only Just started playing it a few months ago and the possibilities are endless. The skill training system is even good for casuals as when you train a skill it continues to train in real time even when you are logged off. You can literally be anything you want from a pirate to a smuggler to a mad scientist to a tycoon industrialist to a market trader to a plain jane mission runner.

Add to all that a pretty kick ass looking graphics package and I think you can;t really get more imersion than this game. I was a hardcore wow player untill I picked up this game. I still play wow as i got some good mates in my guild and I like raiding with them, but once the raiding is over I switch over to EVE and play it for hours without even realising. The character building options are pretty much endless and I think the last calculation was that if you wanted to train every single skill in the game to level 5 (highest skill level) it would take untill 2028.

You obviously don;t need every skill in the game to play though, so you just plan out what you want to do using a decent tool like EvEMon and then start training. This game actually makes you think before taking a crazy risk as there are consequences to prety much everything you do. If you go out and try to gank someone in high sec you will get your ass broken into pieces by concord and actually lose your ship. It makes a nice chnage from wow which is a bit carebear especially from a pvp point of view
