Yeah. With big steaks (see my rib of beef pics in the sticky) I seal them, then finish them off in the oven, otherwise you won't get that nice crust. But to be fair, assuming your griddle is nice and hot, resting for 10mins normally finishes the cooking off fome me if you wrap in some kitchen foil. Then use all the juices for sauce, obviously...
