You can only attach to vSwitches and then attach your VMs to the vSwitch. ESXi does not allow you to connect a nic directly to a VM unless you use passthrough. So to get what you wanted, you would need ESXi to accept the Mellanox as a nic and allow you to attach it to a vSwitch. You would then attach your VM to the same vSwitch and you would be good to go.
The question is what the vib will allow you to do.
I think the main outstanding question though is if both the switches you have are not faulty considering all the issues you are having.
