To be honest, that is still a damn good CPU you have there. Don't think the forthcoming Ivy bridge chips will be massively better than what you have.

With the Ivy Bridge they come with graphics on board, is there a way to disable this? And does it effect performance?
I haven't done any CPU research since i purchased this i7, which is just a CPU.
Which GPU/s are you planning to run? As that will dictate whether the i7 920 will be a bottleneck.
ivybridge is just the same as sandybridge except on a smaller dye
Well i need to upgrade my graphics card this year at some point and i dont want the CPU to bottleneck my new graphics card.
