Not sure if this is the right place to ask but is there an easy way to see what footprint I leave on external web-sites from a connection at work?

What do you mean by 'internet footprint'?

I'm assuming you mean the data that companies hold about you from your browsing their website. If that's the case, then no. Not really.
 
If your company has a half sufficient IT department, then you will leave an audit trail, if they have reason to suspect you of doing anything wrong they can view this. You could under data protection act give a written request to view what they have on you, but its going to look a bit dodgy in all honesty.

TBH that's giving you fairly standard information which is very easy to get hold of programmatically in a website.

Even if it is stored, there is no way for you to be identified by name as being attached to that data (without using malware to get the information from your computer, and that's highly unlikely).

You will never, ever find out what information sites have gathered about you/your IP.
